Mayo-Rubbed Mesquite Smoked Wings

Well - another attempt at wings in the Smokette. I decided to try something totally different today. Click image to enlarge
I took a dollop of mayonaise and a few tablespoons of leftover rub from the mustard challenge , mixed them together, and slathered them over the wings. Yeah, I'm lazy, and didn't bother to trim them. Into the Smokette they go. I decide to use about 2 ounces of mesquite for this. Yes, mesquite. I keep reading that its evil stuff, and should only be used for beef... but I've got 2 boxes of it, and want to try it. What the hell.

A couple hours later, they're ready to be finished on the grill for 10 minutes or so.

Final Conclusions -

These were the best wings I've made. Juicy, tender, and perfectly smoked. I actually liked the mesquite smoke. A nice flavor. Finishing on the grill is crucial for crispy skin.
